my escapism

With the temporary job beginning a couple of days ago, I had what seemed like the last carefree baking session ever since the post-graduation vacation period sailed in. Gone are the days of waking up late and baking once every two days on average. On hindsight, it would probably bode well for the ever-expanding waistline, but it still feels sad that the only day(s) I would be able to whip something up would be during the weekends.

On a positive note, what shall I bake this weekend?

Orange Raisin Muffins

2 cups flour
3/4 cups sugar
1 tsp baking powder
1/2 tsp baking soda
1 cup raisins, plumped
1 egg
1/2 cup orange juice
1/4 cup oil
1 tbsp orange rind

  1. Combine the dry ingredients together. Stir in the raisins.
  2. In a separate bowl, beat egg, orange juice, oil and orange rind.
  3. Add to dry ingredients and stir.
  4. Bake at 200C for 15-20mins.

    Hey, sweetie, I have the same situation at home – only on the weekends, and sometimes not even that!😦

    These muffins look delicious – I would love to see more of your fantastic cookies around here. Already an inspiration for my Xmas gifts in the end of the year.😉
